classes

lessons in home preserving

The three hour classes will walk you step-by-step through
the canning experience and include:

•  produce and ingredients
•  canning supplies
•  hands on canning experience in small groups
•  a light lunch
•  a jar of the class creation to take home (amount varies depending on class)
By the end of a class you will leave with the knowledge and
confidence to begin canning at home.
NEW: This year we are offering a couple of bulk workshops to
provide attendees with the opportunity to keep the mess in our
kitchen and bypass the prep work that comes with canning at home.
These workshops will be a fun way to can amongst friends.

•  May 22   Pickled Asparagus – Bulk Workshop $95
A taste of spring transformed into a tangy year-round appetizer. In this class we
will teach the basics of pickling, while providing you with an opportunity to can
in bulk. Go home with a dozen pints of just-in-season of Canby asparagus.

•  June 19   Old Fashion Strawberry Jam – $45 FULL
This entry-level class focuses on using the natural pectin in your fruit when
creating jams and jellies. The no-pectin method will form a looser jam and
naturally highlight the taste of sweet summer strawberries while using less sugar
than most box-pectin recipes. There is no comparison.

•  July 17   Bread Making and Blueberry-pepper Jam - $60
Learn the ins and outs of baking yeast breads. We will bake a beautiful multi-
grain loaf of bread and while it rises teach you the basics of canning this sweet
and spicy party-favorite. A great class to take with a friend!

•  August 7   Peach Halves – Bulk Workshop - $95 CANCELLED
We will provide all of the supplies and ripe peaches. Leave the mess in our
space and take home a dozen quarts of sweet sunshine! This self-directed
workshop is available for anyone who has previously attended a Good Jar canning
class (required). We will provide assistance and be available for questions.

•  September 11 Oktoberfest Party - $60
Bring a friend or your significant other, this class will be sure to
please everyone. We will help you prep for the best Oktoberfest Party ever.
Learn how to make a beer mustard, bring home your own homemade sauerkraut*
(some TLC will have to be given to this after the class but you won’t need to can
it), and learn to master the soft pretzel. We will leave the sausages to Voget
(www.vogetmeats.com) but you will certainly be the star. Polka not included.

•  September 18 Salsa - $45
Favorite summer ingredients of cilantro, peppers, onions and just-picked
tomatoes create a salsa that’s hard to share.

•  October 16   Sauerkraut – $45
We will begin the six week process in class and send you home with instructions
on how to complete and can the sauerkraut in time for Christmas. Your take will
yield approximately six pints/twelve cups of unfinshed kraut. Prerequisite: At
least one prior Good Jar class or prior canning experience. You won’t have to
tend to it everyday but at least once a week.

•  November 13 Holiday Preserves – $50
We will teach you how to make three different seasonal preserves that will
create beautiful, awe-inspiring and much-loved gifts for the holidays.

All classes will start at 10:00 a.m. and will run approximately three hours, with the exception of the bulk classes which may go longer, depending on your speed. Feel free to bring your own apron, or use one of ours, as canning can be messy.

Join us for one or all of the classes. Registration forms and payment are due one week prior to the class. Class capacity is six students and will be filled on a first-come first-serve basis. A waiting list will be started as needed. Class fees covers all ingredients, canning supplies, and snacks.

A 10o/o discount applies to registration of three or more classes in the 2010 season.
